Last-Minute Veggies

Being the procrastinator that I am, I’m pushing the time limit on a day I have to dash off to a luncheon bearing vegetables. Think quick! I have an hour to spare…what can I do in that amount of time? The internet and good ol’ Martha Stewart come to the rescue with “Quick Vegetable Side Dish Recipes.” I opt for Garlicky Roasted Asparagus and Oven-Roasted Grape Tomatoes with Chives. The recipes say “under 30 minutes,” so what have I got to lose (except time)?

I dash off to the grocery store just down the street, bring fresh produce home, and get to cooking. Here’s what I end up with:

 

 

Surprisingly fast and easy, these recipes truly do take under half an hour – perhaps a tad longer if it’s you’re first time. Best of all, they’re a hit at lunch!

Corollary: I have leftover ingredients in the fridge the following day, and decide to cook the vegetables again. I love that the recipes are simple enough to remember so I can do everything by memory. This time, however, I combine everything into a single dish. And because I feel like it, I squeeze in some mandarin juice. And I may have thrown in some chili flakes too. (If you know me, you already know I can’t help myself.) The result is something equally delicious/healthy, but with a slightly sweet flavor you can’t exactly place.
